Delectable Delights — Braised Chicken Thighs

Braised Chicken Thighs w/ French Couscous & Green Beans

Ingredients:

Green Beans
Rosemary
Black Olives
Garlic
Lemon
French Couscous
Chicken Thighs
Flour
Diced Tomatoes
Chicken Demi-Glace

Prep: Bring 1 cup water and salt to a boil in small pot. Trim green beans and cut into 2-inch pieces. Strip leaves from rosemary and chop. Roughly chop olives and garlic. Halve lemon.

Make Couscous and Season Chicken: Add couscous to boiling water. Cover, remove from heat, and let stand 5min until water is absorbed. Meanwhile in a large bouts season chicken all over with salt and pepper. Sprinkle flower and toss to coat. 

Sear Chicken: Large pan heat large drizzle of olive oil over med-high heat. Add chicken and cook until it browns, 2-3min. (I usually flip every 2min and cooked chicken for 6-8min. I like to make sure it’s done or close too depend on the next step.) Remove to a plate.

Cook Vegetables: In same pan, heat a drizzle of olive oil over med-heat. Add green beans, garlic, and rosemary. Toss until garlic is fragrant, 1min.

Braise Chicken: Stir diced tomatoes, half the chicken demi-glace, and 1/4 cup water into pan. Scrape up any bits on bottom. Bring to a simmer, med-high heat. Return chicken to pan and toss to cover in sauce. Simmer 4-5min until chicken is cooked through. Remove from heat and squeeze a little lemon juice into pan. 

Finish and Plate: Fluff couscous with fork. Add drizzle of olive oil and squeeze of lemon. Season with salt and pepper. Divide couscous between plates and top with chicken, green beans, and sauce. Garnish with olives.

This was a tasty dish. I usually don’t eat chicken thighs or olives, but put it all together in this recipe and you have a delectable dish to eat.

  1. I’ve tried other meal delivery services but haven’t tried Hello Fresh yet. This looks like something I’d love, but not sure if my kids would eat it!

    • They have a family meal plan. Not sure what’s in it, but the meals are customized in a way. If you are vegetarian they have that or if are allergic to something then they hold that out. It’s worked great for us so far and if we have issues the customer services is quick about helping you out. Very polite.

  2. Ever since my move, my delivery has been off schedule and it has messed with my meal planning. I don’t think I got this dish. I probably chose something else. My husband has a thing with olives. The thought of eating them actually makes him shudder! LOL

    • I don’t like olives either, but they where ok in this dish. ^_^
