I thought I would also share my kitchen creations or disasters with you!
I picked up the Delish Eat Like Every Day’s the Weekend from my library. Their are many many recipes inside and I’ve been trying out a few of them. The Cowboy Breakfast Skillet was amazingly delicious. The only down side is I made it for me, my hubby and son so, we had a lot left over and had to throw it out unfortunately. I’d suggest makeing this when you have family visiting or you have a big family ^_^.
Ingredients:
6 slices Bacon, 2 med. Russet Potatoes, 1 Green and 1 Red Bell Pepper, 1/2 med. Onion, 1 can Black Beans, 3 Green Onions, 1/2 teaspoon Chili Powder, 1/4 teaspoon Paprika, Salt, Black Pepper, 10 large Eggs, 1/4 cup Half-and-Half, 3/4 cup Cheddar Cheese, 3/4 cup Monterey Jack Chess, and Hot Sauce for serving.
- Oven-Safe Skillet: Before getting started, make sure to use a pan that can go into the oven after being on the stove.
- Instead of two different bags of cheeses, I bought the one that combines them.
- I also didn’t have Half-and-Half, so I made my own: butter and milk together.
- Peel and Dice Potatoes
- Chop Red and Green Bell Pepper
- Chop Onion
- Drain and Rinse Black Beans
- Thinly Slice Green Onions
– Preheat oven 350
– In a large skillet cook bacon until crispy, 8min. Place on paper-towel and drain, then chop. Pour off fat in skillet, but keep 2 tablespoons in the skillet for next step.
– In skillet with fat add potatoes, bell peppers, and onions. Cook, stirring occasionally until soft, about 5 min.
– Pour 1/4 cup water over vegetables and cover skillet with a large lid. Cook until potatoes are fork-tender, 15min or so.
– While the vegetables cook: In a large bowl, whisk together eggs and half-and-half. Stir in half of both cheeses and season with salt and pepper.
– Add black beans, green onions, chili powder, paprika, and bacon. Season with salt and pepper – stir.
– Pour egg/cheese mixture over skillet and gently stir to combine, then sprinkle with remaining cheeses.
– Bake in oven for 30min until eggs are puffy and set. Keep an eye on it.
– Serve with hot sauce or salsa or ketchup or syrup. Whatever people like.

This would most likely be a weekend thing for me just based on all the prep. But it looks delicious and I bet it was very filling!

That looks amazing! A lot more work than I would be prepared for in the morning though. That would definitely have to be a “breakfast for dinner”! LOL I’m NOT a morning person!

That’s what we did, is made it a breakfast for dinner. I couldn’t do this for the morning. I’m so Not a morning person either. ^_^ It is delicious and well worth eating.
